Cream Tomato Soup

This soup is the best tomato soup I have ever made! Me and Tom labelled it ‘a posh soup’, because the portions are rather small and it doesn’t look or taste like the usual, home-made tomato soup, and although there’s nothing wrong with typical home-made tomato soup, I personally like this one much much more! :)

Ta zupa jest bez dwóch zdań najlepsza zupa pomidorowa jaka zdarzyło mi się kiedykolwiek przyrządzić! Nazwaliśmy ja z Tomaszem ‘posh zupa’ ponieważ wychodzi jej raczej niewiele (dwie średnie porcje) no i ani nie wygląda, ani nie smakuje ona jak zwykła, swojska pomidorowa. I chociaż i ta swojska ma swoje niezaprzeczalne walory, ja osobiście skłaniam się do tej, której opis znajdziecie poniżej.

Ingredients (for two medium portions)

  • One spoon of butter (because our dog ate the butter that I prepared for the soup – straight from the fridge! – I used olive oil spread) 
  • 2 spoons of olive oil 
  • One bay leaf 
  • One big carrot, sliced 
  • 1 onion, chopped 
  • 1 clove of garlic, chopped 
  • 1 spoon of fleur 
  • 4 big tomatoes, cut into portions (I used one can of peeled tomatoes and 2 small fresh tomatoes) 
  • A handful of fresh basil leaves 
  • 250ml of coconut milk (you can also use cow milk, but it is coconut milk that gives the soup this unusual taste and aroma) 
  • Bit of sugar, salt and pepper 
  • To serve you can use rice, thin pasta or croutons, whichever you like.

Składniki (2 średnie porcje)

  • 1 łyżka masła (z powodu małego wypadku w którym masło zostało prawie całkowicie pożarte wprost z lodówki przez naszego psa, musiałam użyć margaryny z dodatkiem oliwy, ta jednak nadawała się do gotowania) 
  • 2 łyżki oliwy z oliwek 
  • 1 liść laurowy 
  • 1 duża marchew pokrojona w plastry 
  • 1 cebula, pokrojona w kostkę 
  • 1 posiekany ząbek czosnku 
  • 1 łyżka mąki pszennej 
  • •4 duże dojrzałe pomidory, pokrojone na kawałki (ja użyłam 400g pomidorów z puszki plus 2 małe świeże pomidorki) 
  • garść listków bazylii 
  • 250 ml mleczka kokosowego (może być tez krowie, ale to właśnie kokosowe sprawia, ze zupa smakuje i pachnie tak smakowicie) 
  • szczypta cukru, sól i pieprz 
  • do podania może być biały ryz, cieniutki makaron bądź grzanki

Preparation:

  • Melt butter and olive oil in a pot (big enough for the whole soup). Add bay leaf and fry until it releases the aroma. Add carrots and fry over low heat for 2 minutes, stirring occasionally. Add salt and pepper. Mix together, cover and stew for about 5 minutes. 
  • Add onion and garlic, stew for another 5-7 minutes. 
  • Add flour, mix together and fry for 1 minute. If it gets to dry you can add a bit more olive oil. Add tomatoes, salt and pepper. Cook uncovered for 20-30 minutes, until the soup will be thick. 
  • Take out the bay leaf, move the soup into the mixing bowl, add basil leaves and mix using hand blender. Add coconut milk, mix together and sieve the soup back into the pot. 
  • Cook the cream soup again over low heat for 3-4 minutes. Serve with rice, thin pasta or croutons (or with nothing at all!). I served it with some thin egg pasta.

Przygotowanie:


  • W garnku (odpowiednio dużym żeby pomieścił cala zupę) roztopić masło z oliwą. Dodać liść laurowy, smażyć aż uwolni się aromat. Dodać marchewkę i smażyć na małym ogniu przez 2 minuty mieszając od czasu do czasu, dodać sol i pieprz. Wymieszać, przykryć i dusić przez 5 minut. 
  • Dodać cebulę i czosnek i, dalej dusić pod przykryciem przez kolejne 5 - 7 minut. 
  • Dodać mąkę, wymieszać i smażyć przez minutę. Dodać pomidory, doprawić sola i pieprzem. Gotować bez przykrycia przez 30 minut, aż zupa będzie gęsta. 
  • Wyjąć liść laurowy, przełożyć do innego naczynia, dodać bazylię, zmiksować blenderem. Dodać mleko kokosowe, wymieszać i przelać przez sito z powrotem do garnka w którym gotowała się zupa. 
  • Gładką zupę ponownie zagotować na małym ogniu. Podawać z ryżem, makaronem bądź grzankami, albo bez żadnych dodatków. My podaliśmy z cienkim makaronem.

Pizza

  1. Spicy version for meat eaters: ham, mozzarella, tomatoes, mushrooms, chilli peppers and sweet corn. 
  2. Green version for vegetarians: mozzarella, tomatoes, spinach, mushrooms and garlic. 

Maybe you’ve already noticed that our recipes are often vegetarian: that’s because I am pesco-vegetarian myself, which means that of all meats I only eat fish (not really often though). Tom is very understanding and he usually agrees to eat vegetarian versions of our meals so we can both eat the same (saving some time and money). However, this time we could go crazy and decided to make two pizzas, with one of them being very much the meat-eater option :)

  1. Wersja pikantna dla 'mięsożerców': z szynka, mozzarella, pomidorami, pieczarkami, papryczkami chili i kukurydza. 
  2. Wersja zielona dla wegetarian: z mozzarella, pomidorami, szpinakiem, pieczarkami i czosnkiem. 

Jak może dało się już zauważyć, większość naszych przepisów jest wegetariańska, a to dlatego ze jestem tak zwanym pesco-wegetarianinem, czyli z mies jem tylko ryby, i to tez raczej nieczęsto. Tomek jest na tyle wyrozumiały, ze bardzo często posila się wegetariańskimi wersjami potraw, po to żebyśmy mogli oboje zjeść to samo (i tym samym oszczędzić czas i pieniądze :P ).

Jednakże w tym przypadku mogliśmy nieco ‘zaszaleć’ i zdecydowaliśmy się zrobić dwie pizze, z których jedna z nich była zdecydowanie opcja dla mięsożernych :)

Dough for two large pizzas:
  • 4 glasses of flour 
  • 10g of dry yeast (1,5 pack) 
  • Small teaspoon of salt 
  • Small teaspoon of sugar 
  • 300g (one glass and a bit) of water in room temperature 
  • Some oil to spread onto the baking trays (I used olive oil spread that I usually use for sandwiches) 
Toppings:
  • 5-6 tomatoes 
  • 200g of mushrooms (100g per pizza) 
  • 5-6 slices of ham 
  • 5-6 portions of frozen chopped spinach 
  • 2 cloves of garlic 
  • ¼ can of sweet corn 
  • Salt and pepper 
  • 300g of medium grated mozzarella cheese 
  • Half glass of fresh chopped basil leaves 

Tomato sauce:
  • One can of peeled tomatoes 
  • Salt 
  • One spoon of olive oil 

You will also need two large baking tins. I used one rectangle-shaped: 23cm x 35 cm and another one was just the universal baking and frying round dish (32cm diameter) that I bough somewhere about two years ago for 5 quid – it is very useful for everyday cooking!

Original recipe recommends two larger tins, but the ones I used were just fine. If you want your pizza to be thinner you should probably use larger tins or trays.

Ciasto, składniki na dwie duże pizze:
  • 4 płaskie szklanki maki 
  • 10 gram drożdży instant (ok 1,5 paczuszki) 
  • Plaska łyżeczka soli 
  • Plaska łyżeczka cukru 
  • 300g (czyli szklanka i ciut) wody w temperaturze pokojowej 
  • Tłuszcz do wysmarowania blachy (ja użyłam margaryny z oliwa z oliwek, która zwykle stosuje do kanapek) 

Dodatki:
  • 5-6 pomidorów 
  • Ok 200g pieczarek (po 100g na pizze) 
  • 5-6 plasterków szynki 
  • 5-6 kulek mrożonego, posiekanego szpinaku 
  • 2 ząbki czosnku 
  • ¼ puszki kukurydzy 
  • Sol i pieprz 
  • Ok 300g startej mozzarelli (suchej, nie tej twarogowej w kulce), może być tez zwykły ser 
  • Ok pól szklanki świeżej posiekanej bazylii 

Sos pomidorowy:
  • Puszka pomidorów, najlepiej bez skorek 
  • Szczypta soli 
  • Łyżka oliwy z oliwek 

Potrzebne tez będą dwie duże blachy do pieczenia. Ja użyłam jednej prostokątnej o wymiarach 23cmx35cm (typowej do ciasta) i uniwersalnego żaroodpornego okrągłego naczynia o średnicy 32 cm (używam go tez do smażenia większych ilości jedzenia, zapiekania itd – bardzo przydatne jak na produkt z promocji za £5 kupiony w jakimś sklepiku ze dwa lata temu :) ).

Oryginalny przepis poleca większe blachy, ale te jakich użyłam okazały się akurat. Ale myślę, ze jeśli ktoś chciałby zrobić pizze na cieńszym cieście, powinien prawdopodobnie użyć czegoś o większej powierzchni.

Preparation:
  • Sift the flour into a bowl and mix with yeasts, salt and sugar. Add water and mix for about 30 seconds. Form the dough into a ball. Cover the bowl with a cloth and put aside somewhere warm to rise, leave for about 2 hours. 
  • Once the dough has risen, sprinkle some fleur onto the table and take the dough out and onto the table. Cut the ball in half, separate two pieces and cover with a cloth for another 30 minutes. 
  • Fry the mushrooms and ham (for meaty option) with a bit of salt. Warm the spinach in a pan with salt and garlic, until it’s defrosted and warmed up a bit. 
  • Prepare tomato sauce: blend canned tomatoes with olive oil and salt using hand blender. 
  • Spread some oil onto the baking trays, heat the oven to 250 degrees (20-30 degrees less if it’s a fan oven). Place the dough into the trays and spread with your fingers onto the surface. 
  • Spread the tomato sauce onto both pizzas, cover with portioned tomatoes and sprinkle a half of mozzarella cheese portion on the top. 
  • Vegetarian option: add fried mushrooms, warmed spinach and sliced onions, sprinkle with chopped fresh basil leaves. 
  • Pizza with ham: add fried mushrooms and ham, sweet corn , sliced onions and chilli peppers (depending on your own preferences you can add as many as you like , Tom added quite a lot ), sprinkle with chopped fresh basil leaves. 
  • Put both tins into the oven and bake for about 20 minutes. Sprinkle another half of mozzarella cheese onto the pizzas and bake for another 10-15 minutes until the edges turn brown and the cheese melts. 
  • If you have some tomato sauce leftovers you can add some basil and pepper, heat it up in a saucepan and use a sauce over the pizza.

Przygotowanie:
  • Przesiana do miski make wymieszać z drożdżami, sola i cukrem. Wlac wodę i mieszać przez ok 30sek aż składniki się połącza. Miskę przykryć dobrze ściereczką i odstawić do wyrośnięcia w cieple miejsce na ok 2 godziny aż urośnie. 
  • Kiedy ciasto urośnie, wyłożyć je na stół i uformować kule, przekroić ja na dwie części. Odsunąć jedna cześć od drugiej, przykryć ściereczka i pozostawić na kolejne 30 minut. 
  • Podsmażyć pieczarki (przez ok 4 min) z odrobina soli i szynka (w wersji nie-wege). W rondelku na małym ogniu pogrzać mrożony szpinak z odrobina soli i posiekanym czosnkiem, tak żeby się rozmroził i nieco podgrzał. 
  • Przygotować sos pomidorowy: pomidory z puszki zmiksować blenderem z oliwa i sola. 
  • Wysmarować blachy tłuszczem, nagrzać piekarnik do 250 stopni (lub 20-30 st mniej jeśli jest to piekarnik z termoobiegiem). Wyłożyć ciasto do blaszek i palcami rozciągnąć po całej powierzchni. 
  • Na powierzchni rozsmarować sos z pomidorów i na obu pizzach ułożyć pomidorki pokrojone na cząstki i pierwsza warstwę sera. 
  • Pizza wege: ułożyć na cieście pieczarki pokrojone w plasterki oraz uprzednio rozmrożony i pogrzany w rondelku szpinak. Na to ułożyć cebulkę pokrojona w paski. Posypać posiekana świeża bazylia. 
  • Pizza z szynka: ułożyć na cieście uprzednio podsmażona szynkę z pieczarkami pokrojonymi w plasterki, posypać kukurydza i cebulka pokrojona w paski, dodać papryczki chili (wedle uznania, Tomasz dodał ich całkiem dużo :P ). Posypać posiekana świeża bazylia. 
  • Blaszki wstawić do piekarnika i piec przez ok 20 minut. Wyjąc i posypać druga warstwa sera. Wstawić z powrotem i piec przez kolejne 10-15 minut aż boki ciasta będą zarumienione a ser roztopiony. 
  • Jeśli zostanie wam trochę sosu pomidorowego można podgrzać go nieco w rondelku, doprawić bazylia i pieprzem i używać jako sosu do gotowej pizzy. 
Obie pizze wyszły bardzo smaczne, chociaż wydawało się czasami ze dodatków było na nich trochę za dużo ;) Pizze wyszly tak wielkie, ze starczyły nam na obiad na następny dzień!

Risotto with Aubergines and Courgettes

Currently we've got a courgette season – my boss has plenty of them growing in her garden and at least once a week she decides to share some of her crops with me :)
So, whether I want it or not, for the next few weeks my kitchen experiments will be focused on the meals including courgettes.

The meal described below (just like many others I cooked and probably will be cooking in the near future) was found on the amazing blog entitled Kwestia Smaku (‘The issue of taste’) by Mrs. Asia (http://www.kwestiasmaku.com/). This is my attemp :)

Obecnie mamy sezon na cukinie – moja szefowa ma ich mnóstwo w swoim ogrodzie I conajmniej raz w tygodniu postanawia podzielić się ze mną swoimi zbiorami. To spowodowało, że chcąc nie chcąc, moje eksperymenty kulinarne będą się przez najbliższy czas obracać wokół cukinii właśnie.

Poniższą potrawę, jak wiele innych, znalazłam na wspaniałym blogu Pani Asi – Kwestia Smaku (http://www.kwestiasmaku.com/). Tutaj przedstawiam swoje podejście :)





Preparation time: 

App. 20 minutes 

Baking time:

55 minutes 

Ingredients: 

  • 6 medium sized tomatoes, ideally very ripe (although I used ordinary ones, as I found them in my local veg shop) 
  • 1 big aubergine 
  • 3 medium-sized courgettes 
  • One clove of garlic (I used two because I like garlic! :D ) 
  • 6 tablespoons of olive oil 
  • 250 ml (a bit more than one glass) of vegetable boullion (or plain water) 
  • 200ml of tomato passata (although I used Ragu Original, because I had a half of a jar leftover after yesterday’s dinner) 
  • One medium onion of half of a big one (I used red onion from my boss’s garden) 
  • One bag of plain white rice 
  • Two table spoons of cut parsley leaves 
  • Salt and pepper 
  • 150-200g of grated cheese (I used simple cheddar from co-op)

ok. 20 minut 

Czas pieczenia:

55 minut 

Składniki: 

  • 6 średnich pomidorów, najlepiej dojrzałych (ja użyłam niekoniecznie bardzo dojrzalych, a po prostu takich, jakie były w miejscowym warzywniaku) 
  • 1 duży bakłażan 
  • 3 średnie cukinie 
  • 1 ząbek czosnku (badz dwa jesli lubicie czosnek, tak jak ja :-) ) 
  • 6 łyżek oliwy z oliwek 
  • 250 ml bulionu warzywnego (może też być woda) 
  • 200 ml passaty pomidorowej (ja dodałam Ragu Orginal, bo akurat została połowa słoika po wczorajszym obiedzie) 
  • pół dużej cebuli (ja uzylam czerwonej, rowniez z ogrodka szefowej) 
  • paczuszka białego ryżu (z kartonika 4x125g) 
  • sól i pieprz 
  • 2 lyzki posiekanej natki pietruszki 
  • 150-200g tartego sera (użyłam zwykłego cheddara)



Preparation:


1.Peeled tomatoes, unpeeled aubergine and courgettes cut into pieces and put aside (aubergine separately). Preheat the oven to 200 (a bit less if it’s a fan oven, I usually heat mine to 10-15 degrees lower).
2.Fry the onion on 3 tablespoons of olive oil for about 5 minutes. Add garlic and aubergine and fry until brown for about 5 minutes.

Przygotowanie:

1.Pomidory obrane ze skórki, bakłażana I cukinie pokroić, odlożyć na bok (bakłażana oddzielnie). Piekarnik rozgrzać do 200 stopni. Ja używam 'fan oven' więc zwykle nastawiam na 10-20 stopni mniej niz podano w przepisach.
2.Cebule podsmażyć na oliwie z oliwek przez około 5 minut. Dodać czosnek w plasterkach I po chwili bakłażana, lekko go zarumienić smażąc przez niecale 5 minut na niewielkim ogniu.








3.Add rice and pour boullion after one minute. Boil the mixture and add passata, salt and pepper, plus 3 tablespoons of olive oil. Cook for about a minute and put aside.
4.Mix with parsnip and put the mixture into oven-save bowl (remember to spread some olive oil inside the bowl so the rice and veges won’t stick to it).

3.Dodać ryż I po minucie wlać bulion. Zagotować, dodać passatę/sos pomidorowy, doprawić solą I pieprzem, dolać około 3 lyżki oliwy z oliwek. Gotować przez około minutę I dodać pomidory I cukinię. Gotować przez minutę I odstawić z ognia. 
4.Wymieszać z pietruszką I umieścić w żaroodpornym naczyniu uprzednio posmarowanym oliwą.





5.Cover the bowl and put into preheated oven for about 35 minutes
6.After that sprinkle the cheese onto the top of the risotto, cover and put into the oven for another 20 minutes.

5.Przykryte naczynie wstawic do piekarnika na około 35 minut. 
6.Po tym czasie posypać wierzch tartym serem, przykryć z powrotem i piec przez kolejne 20 minut.





Our risotto turned out really well, and – what’s really important – really cheap because we used the seasonal vegetables. The risotto is very filling (cheese and rice I guess!) and lasted until the next day. It tasted just as good after re-heating :)

Wszystko wyszło wyśmienicie, i - co najwazniejsze - niedrogo, a to dlatego że użyliśmy warzyw sezonowych. Potrawa jest bardzo sycąca I starczyła nam do następnego dnia. Po odgrzaniu była wciąż tak samo dobra :-)
